Marry Me Chicken
Equipment

Ingredients
- 3 chicken breasts or 6 breast cutlets
- 50g flour
- 1 cup chicken stock
- 1 cup heavy cream
- 1/3 cup grated parmesan
- 1/3 cup chopped sun dried tomatoes
- 2 tbsp olive oil
- 2 tbsp butter
- 2 tbsp minced garlic
- 1/2 tsp oregano
- 1/2 tsp thyme
- handful fresh basil, chopped
- salt and pepper
- lemon wedge
Steps
- Season chicken with salt and pepper; dredge in flour
- Heat olive oil and butter over medium; brown chicken 4-5 min per side ; set aside
- Saute ~2 tbsp minced garlic, deglaze with 1 cup chicken broth
- Add 1 cup heavy cream and 1/2 cup parmesan; simmer 1-2 min
- Add dried herbs, salt and pepper, 1/3 cup sun dried tomatoes
- Add chicken and simmer another 1-2 min
- Garnish with basil; top with squeeze of lemon; serve

Ingredients
- ~500g ground meat
- 1 egg
- 1/3 cup breadcrumbs
- 1/4 cup parmesan cheese
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp minced parsley
- 1 tsp salt
- 1/2 tsp pepper
Steps
- Preheat oven to ~200C/400F
- Combine ingredients
- Scoop 2-3cm balls onto covered baking sheet
- Bake 17-20 minutes , turning halfway through
Tortellini Soup
Equipment
- Large pot
Ingredients
- ~500g mild italian sausage
- ~1 liter chicken stock
- 1 package tortellini
- 1 can crushed tomatoes
- 1 cup heavy cream
- 1 yellow onion
- 2 handful leafy greens
- 3 tbsp chopped garlic
- 2 tbsp tomato paste
- 1 tsp salt
Steps
- Saute onions, garlic, and sausage . Drain excess fat, season with salt.
- Add stock, tomatoes, and tomato paste and simmer 15 min.
- Stir in greens, tortellini, and cream; simmer 3-5 minutes
Pickled Vegetables
Equipment
- Mason jars or other pickling container
- Pot
Ingredients
- 2-3 thinly sliced red onions
- 1 cups vinegar
- 1 cups water
- 1/3 cup sugar
- 1 tbsp sea salt
- (Optional) 2 garlic cloves, 1 tsp peppercorns
Steps
- Place chopped or sliced onions in container.
- Cook remaining ingredients in saucepan until solids are dissolved.
- Allow liquid to cool; pour over onions
- Marinate in fridge at least one hour
