===== Ingredients =====
  * 2 cups ++cherry tomatoes, halved or quartered | can mix red and yellow, use grape quartering tool++
  * 2 cups cucumber, diced/sliced
  * 1 can drained chickpeas
  * 1/2 cup chopped mint
  * 1/2 cup chopped ++parsley | can sub or add dill++
  * 1/2 ++red onion, diced/sliced | can sub pickled++
  * 1/2 lemon
  * 1/4 cup olive oil
  * 2 tbsp red wine vinegar
  * 1/4 tsp salt
  * 1/4 tsp pepper


===== Steps =====
  - Mix ++vegetables | 2 cups sliced cherry tomatoes, 2 cups diced cucumbers, 1 can drained chickpeas, 1/2 cup chopped mint, 1/2 cup chopped parsley, 1/2 sliced red onion++
  - Mix in ++dressing | drizzle olive oil, 2 tbsp red wine vinegar, 1/4 tsp each salt and pepper, squeeze of lemon++
  - Let sit at 30-60 minutes before serving
